The Limmu Kossa estate, in Ethiopia's Djimma region, is nestled within the Eastern Afromontane Biodiversity Hotspot. The 356 hectare estate thrives in an ecosystem rich in flora and fauna, which naturally fosters vibrant soil health.
Following a rigorous selective handpicking process, the cherries are promptly pulped. After careful fermentation, the parchment is washed in clean water and transferred to raised beds to sun-dry. The coffee is raked frequently to ensure uniform drying, reaching optimal moisture content within 7 to 12 days.
