The cherries are harvested every 3 weeks. The coffee is taken from the farm at 1,900 masl to the processing plant at about 1,780 masl and left in a wooden crate for an initial fermentation in the cherry for 24 hours. It is then pulped and left to dry ferment in majolica tanks for 28 hours. After that, it is washed 3 times and left to drain for 1 hour and taken to the dryer for 18 to 25 days.
